This month's "Our Daily Bread" focuses on three diocesan organizations: the Knights of Columbus, the Ladies of Charity and the Knights of St. John. As host, Father Paul D. Seil delves deeper into the history of each of these organizations. He fondly remembers his own experiences with the Knights of Columbus.

"When we taped the segment on diocesan organizations, it brought back lots of memories of my dad and his involvement in the Msgr. Nash Council (South Buffalo) of the Knights of Columbus," Father Seil said. "As a kid, I can remember Catholic organizations playing a big role in the social life of families. Today, these organizations continue to serve the Church by putting 'flesh on the bones' of the Gospel message. They do the work that needs to be done in the name of Christ."

Mike Hallinan from the Knights of Columbus was first in the kitchen with Father Seil. Together they made sweet and sour cabbage, and talked about Father Michael J. McGivney, founder of the Knights of Columbus. Father McGivney was the assistant pastor of St. Mary Church in New Haven, Conn. He, along with his parishioners, established the Knights of Columbus as a fraternal benefit society. The organization is still true to its founding principles of charity, unity and fraternity.

Next up was, Eileen Nowak from the Ladies of Charity. She taught Father Seil to make a quick and easy shrimp with pesto appetizer, while talking about this diocesan organization. The Ladies of Charity of the United States of America is a national organization. Their mission statement reads: "Diocese of Buffalo Ladies of Charity is an organization of women volunteers embracing the ideals of St. Vincent de Paul and St. Louise de Marillac. We inspire and encourage each other while working with the needy to break the cycle of poverty in our communities and in the world."

Finally, Vincent Binder from the Knights of St. John joined Father Seil in the kitchen, making an apple and pear tartlet. Binder explains that The Knights of St. John International is a Roman Catholic men's fraternal organization whose four virtues are faith, hope, charity and fraternity. The official International Charity of the Knights of St. John International is the St. Vincent de Paul Society.
